										<content:encoded><![CDATA[<p class="p3">El conocimiento sobre las comunidades microbianas que conviven en simbiosis con el ser humano ha tenido hasta ahora poco impacto en la clínica, prestándose solo atención a los patógenos u oportunistas en su capacidad de generar enfermedades; pero la colonización microbiana es imprescindible para un crecimiento y desarrollo normal. Actualmente ha aumentado el interés en conocer la estructura y funciones de esas comunidades microbianas para entender la causa de muchas patologías de índole autoinmune o de desregulación del sistema inmunitario.</p>
<p class="p3">La lucha contra las enfermedades infecciosas fue el gran avance de la medicina moderna. Es fácil predecir que los conocimientos sobre la composición y funciones de las comunidades de ‘simbiontes’ humanos van a ser el primer gran avance de la medicina del siglo XXI. Probióticos y prebióticos son los instrumentos principales para optimizar las funciones de la microbiota. En 2001, un grupo de trabajo conjunto de FAO y OMS definió estos conceptos y estableció las guías y procedimientos necesarios para garantizar su seguridad para el consumo y avalar su eficacia para promocionar la salud humana.</p>
<p class="p3">Tras décadas de investigación básica y clínica, en la actualidad se dispone de información clara y precisa sobre probióticos y prebióticos. Este libro es el resultado del esfuerzo de un buen número de científicos y clínicos expertos convocados por la Sociedad Española de Probióticos y Prebióticos con la generosa colaboración del Consejo Asesor Industrial de la Sociedad. El objetivo es ofrecer una visión completa y amplia de la actualidad del área, y su proyección futura apuntando las nuevas indicaciones que van a enriquecer este campo.</p>
